Ingredients
1 tbsp extra virgin olive oil
2 -4 lamb shanks, depending on the size
1 tbsp onion powder
200g tinned diced tomatoes
½ cup bone broth
2 garlic cloves, finely chopped
1 sprig rosemary, leaves removed and finely chopped
1 bay leaf
Salt & pepper to taste
½ tsp xanthum gum (optional)

I just love my slow cooker and it always gets a great workout in winter. There's nothing better than delicious dinner smells wafting through the house and you've barely done anything!
Remember the days when lamb shanks used to be the cheap cuts? $3.99/kg and then Masterchef came along and everyone discovered them! They are a bit of a treat for us these days but when Costco had them on special I just couldn't resist. The Costco shanks are HUGE. A 4 pack was enough for two meals for our family of 4. I used two shanks per meal because they were so big. The amount you use in this recipe really depends on the size of your shanks. The goal is to feed four people though.
I love that slow cooker companies have released cookers that have the sear function. Searing of the meat beforehand really brings out the flavours. However it will still be delicious without it if you don't have that searing function on yours and don't want to dirty another pan.
The sauce in this dish is just delicious. It's a rich tomato based sauce that goes perfectly with the lamb. I know moving it to a saucepan to reduce means more dishes but it really is worth it for the thick, rich sauce that you get.
Instructions
Toss lamb shanks in onion powder until well coated.
Place oil in slow cooker and sear for 5 minutes on each side or until browned.
Add remaining ingredients and stir to combine.
Slow cook on low for 8 hours or until meat is tender and pulls away from the bone easily.
Once the meat is ready, remove the shanks and any meat that has fallen off and cover to keep warm.
Pour the sauce into a saucepan and simmer until thick and reduced. Remove bay leaf and sprinkle over xanthum gum and whisk in gently if you would like a thicker sauce.
Place meat on plates and top with sauce. This is delicious served with cauliflower mash and greens.
