Ingredients

  • 1 whole chicken (1.5-2kg)

  • 1 lemon, quartered

  • 3 sprigs thyme

  • 1 cup chicken bone broth

  • 1 onion


Butter

  • 100g butter

  • 3 cloves garlic, crushed

  • ¼ cup fresh herbs (parsley, thyme, rosemary etc)


Keto Gravy

  • Pan juices

  • ¼ cup cream

  • Xantham gum

Description

You CAN have gravy on keto! There is nothing better than a good old fashioned roast. This roast chicken is full of flavour from garlic, herbs, butter and lemon. The gravy, made from the chicken’s juices and thickened slightly with cream is the perfect addition to this roast chook!


This dish can also be cooked in the slow cooker, simply cook the chicken for 5 hours on low and then transfer to the oven to crisp up for around 30-45 mins. Baste with the juices from the slow cooker every 20 mins so it doesn't try out.  Prepare the gravy as per the method below. 

Instructions

  1. Preheat oven to 220°.

  2. Cut onion in half and put in roasting tray.

  3. Put lemon and thyme inside chicken cavity.

  4. Mix butter ingredients and slide softened butter under skin (slowly separate skin from meat with hands first).

  5. Put chicken on top of onion and then pour bone broth around it.

  6. Cook in the oven at 220° for 20mins, then 200° for 1 hour and 20mins (coat with juices every 30mins).

  7. Remove chicken from oven and leave to rest for 15mins.


Keto Gravy

  1. Remove onion from pan juices, and put the juices over a low heat.

  2. Add cream and sprinkle over xantham gum. Whisk until warm and combined. Gravy should have a slightly thick consistency. Add more xantham gum if you like your gravy really thick.

  3. Carve up chicken and place on plates, pour over gravy.
