Ingredients

Meat Sauce

  • 1 tbsp extra virgin olive oil

  • ½ onion, diced

  • 2 garlic cloves, finely diced

  • 500g beef mince

  • 100g mushrooms, sliced thinly

  • 1 tsp bone broth powder or 1 beef stock cube

  • 1 tsp mixed herbs

  • Salt and Pepper (To Taste)

  • 400g tin Palmini lasagne sheets


Toppings

  • 150g bacon, diced

  • 125g fresh mozzarella, sliced

  • 150g tasty cheese, grated

Description

When I discovered Palmini lasagna sheets, I knew the exact dish that I wanted to make with them.


This lasagne is a spin on my very popular Beef n' Bacon Lasagne from my cooking service.


For this dish you will need a fry pan or casserole dish that can go from the stove top to the oven.


Of course, if you don't have Palmini lasagna sheets. You can use anything you like as a pasta substitute - sliced zucchini or eggplant for example.


If you are using Palmini lasagna sheets, make sure you rinse them well. They can have quite a distinctive flavour if you don't wash them so you want to get rid of that. They don't need boiling beforehand, the time in the oven will cook them enough.


I topped this lasagne with mix of mozzarella and tasty cheese but of course, you can top it with any cheese you like. For a dairy free version, top with macadamia cream.


I love hiding vegetables in lasagne. It's a fabulous way to get them into the kids! Finally diced capsicum or grated zucchini would be perfect additions.

Instructions

  1. Preheat the oven to 200°.

  2. Place the fry pan or casserole dish over a medium- high heat and add the oil.

  3. When the oil is hot add garlic and onion and saute for 2 mins.

  4. Add mince and brown.

  5. Add mushrooms and then the rest of the meat sauce ingredients (except the Palmini lasagne sheets), simmer until thick.

  6. When the sauce is thick gently insert the Palmini lasagne sheets into the beef mix. Fold some and lay some in the mix.

  7. Then sprinkle over the diced bacon. Then top with the sliced mozzarella and lastly, sprinkle with the grated cheese.

  8. Transfer to the oven and bake for 25 mins or until cheese is golden.

  9. Remove from the oven and serve hot with a fresh salad.
