Ingredients

  • ½ cup Toasted Lupin Flakes

  • ½ cup almonds, chopped roughly

  • ½ cup sunflower seeds

  • ½ cup pumpkin seeds

  • ½ cup coconut flakes

  • ⅓ cup Sukrin Syrup Gold (or sweetener of your choice)

  • 1 tbsp almond butter

  • 1 large egg

  • 1 tsp vanilla extract

  • ½ tsp ground cinnamon

Description

If you are looking for a snack to take on the road with you, then these granola bars are perfect.


You can use any mix of nuts and seeds in these bars as long as the total quantity stays the same. I used almonds, sunflower seeds and pumpkin seeds.


Coconut flakes add to the chewy texture of these bars. If you don't like that, swap for shredded coconut or try flaked almonds instead.


For nut free, omit the almonds and replace with more seeds. Replace the almond butter with butter.


Lupin is becoming quite popular on keto as it is very low carb and can be used in so many ways. The lupin flakes are great and perfect for these bars and keto cereal in general. Lupin beans are legumes though so if you need to avoid these, leave them out and replace with some more nuts or seeds.


I used Sukrin Syrup Gold in these however you can use any sweetener you like really. I prefer the gold has it has a richer flavour.

Instructions

  1. Preheat the oven to 170° and line a square cake tin with baking paper.

  2. Combine all ingredients in a bowl and then pour into the cake tin, pressing down firmly with a spatula.

  3. Bake in the oven for 30mins.

  4. When finished, remove from the oven and allow to cool completely before slicing.
