Description
Hubby and I absolutely love a good Indian curry! I'm really happy that curries can be enjoyed on keto but I have to admit, I've missed having something to soak up the delicious sauce.
When I was creating this recipe, I wanted to make sure I created a nice flufffy naan. I think the coconut flour in the recipe is perfect for this.
This recipe makes 8 serves. If you aren't going to enjoy all of them at once, you can freeze half of the dough before cooking. If you have already cooked, you can freeze the naan in a freezer lock bag or containter with baking paper between each piece. Gently pan fry once defrosted.
A little about the ingredients for you:
Cococut flour - the coconut flour really helps to give the naan its fluffy texture. You could replace it with almond meal but I don't think it would give you the same result. You would also need to add more liquid if you use almond meal as the coconut flour absorbs liquid.
Psyllium husk powder - helps to bind the ingredients. A lot of recipes with psyllium husk powder tend to have a gritty texture. These don't.
Baking powder - baking powder helps the naan to rise.
Cumin - I love cumin and think it's great for added flavour. You can leave it out if you don't like it.
Butter - You could easily replace the butter with ghee or your choice of oil.
Instructions
Conventional Method
Mix together the melted butter and minced garlic in a small bowl.
Combine the dry ingredients for the naan and add 2 tbsp of the garlic butter mix. Combine well and then add the boiling water. Check the consistency of the dough once it is all mixed together. You want a play dough like consistency. If it’s too wet, add a little more psyllium husk powder, too dry add a little more hot water. Place dough aside for 5 - 10 mins until cool enough to touch.
Break the dough into 8 pieces and roll them into balls.
Place a ball on a piece of baking paper and put another piece of paper on top. Gently press down on the dough or roll with a rolling pin. You want the naan to be around 7mm thick. Repeat with the remaining dough.
In another fry pan over medium-high heat, add the olive oil. Add the naan and cook for 3 - 4 mins on each side until a lovely golden colour. Remove from the pan and brush with the remaining garlic butter mix. Repeat with the remaining naan.
Enjoy with a delicious, saucy curry.
Thermomix Method
Mix together the melted butter and minced garlic in a small bowl.
Add the dry ingredients for the naan and add 2 tbsp of the garlic butter mix to the Thermomix bowl and combine for 30 sec/sp4. Add the boiling water and mix for a further 20 sec/sp4. Check the consistency of the dough once it is all mixed together. You want a play dough like consistency. If it’s too wet, add a little more psyllium husk powder, too dry add a little more hot water. Place dough on baking paper and set aside for 5 - 10 mins until cool enough to touch.
