Description
This recipe has been a long time coming. I actually created it for ANZAC Day last year but didn't get around to sharing it on my website so, here it is! Better late than never.
I make these often at home and they always disappear very quickly!
I use Sukrin's Syrip Gold in this recipe because I just love the flavour of it. If you don't have it you could swap for sugar free maple syrup (this will give a slightly different flavour) or more gold granular sweetener.
Flaked almonds give a great texture to these cookies. If you don't have them you could also use slivered almonds or coconut flakes.
If you don't have gold sweetener, white keto sweetener will work too.
This recipe makes 24 delicious cookies with each one containing just 0.6g net carbs!

Instructions
Conventional Method
Preheat the oven to 170° and line two baking trays with paper.
Place butter, Sukrin Syrup Gold, gold granular sweetener and vanilla extract in a saucepan over low heat and stir until the butter has melted and all ingredients have been combined.
Pour the butter mix into a bowl and add the almond meal, flaked almonds and desiccated coconut. Combine well with a spatula or wooden spoon.
Add the bicarb soda and water and stir until combined.
Spoon heaped teaspoon sized balls onto the baking trays and gently flatten slightly. Just enough so the top is flat and not round.
Bake in the oven for 15 - 18 mins or until golden.
Remove from the oven. The biscuits will harden as they cool but the inside will remain nice and chewy.
Thermomix Method
Preheat the oven to 170° and line two baking trays with paper.
Place butter, Sukrin Syrup Gold, gold granular sweetener and vanilla extract in the Thermomix bowl and mix for 3 mins/80°/sp2.
Add the almond meal, flaked almonds and desiccated coconut, and mix for 30 sec/sp3/reverse.
Add the bicarb soda and water and mix for 30 sec/sp3/reverse.
Spoon heaped teaspoon sized balls onto the baking trays and gently flatten slightly. Just enough so the top is flat and not round.
Bake in the oven for 15 - 18 mins or until golden.
Remove from the oven. The biscuits will harden as they cool but the inside will remain nice and chewy.
