For me, there's a clear winner – baby corn. Here's why:
They can be eaten whole, without the hassle of having to separate the kernels from a large, rock-hard cob.
They are low in calories and carbs. A 100-gram serving of baby corn only has around 26 calories and 3.1-gram carbs, compared to regular corn which has 86 calories and 19-gram carbs.
Baby corn has got 0% fat and is a rich source of Vitamins A and C whereas regular corn has around 1.2 grams of fat.
Because of their size, baby corn can be cooked faster and more evenly.
As you can see, baby corn is definitely the healthier option, and when it comes to making fritters, the crunchier texture works better than regular-sized corn. So next time you're planning some vegetarian appetizers, skip the regular corn and go straight for baby corn.

Tips & Tricks
My baby corn fritters recipe is one which I've perfected over the years, through a number of trial and errors. Here are some of my top tips and tricks to help you make the best versions of them, every single time.
Drain the baby corn. Before you start making the fritters, make sure you drain the baby corn well. You can use a colander or paper towels to remove any excess moisture.
Don't overcrowd the pan. Fry the fritters in batches, and don't overcrowd the pan. This will ensure that they cook evenly and don't stick together.
For a nut-free version, replace almond meal with golden flax meal. To make it dairy-free, replace sour cream with coconut yoghurt.
These baby corn fritters go amazingly well with an avocado cream dip (I've given the recipe for this in my post). They also taste great with some mango chutney or spicy ketchup.

Instructions
Conventional Method
Preheat the oven to 120°.
Finely chop baby corn and place in a large bowl.
Add remaining fritter ingredients, except the butter, and combine well.
Melt 1 tbsp of butter in a fry pan over medium heat.
Using a dessert spoon, spoon the fritter mix into the frypan. You should get 12 fritters from the mix.
Cook the fritters for 3 mins on each side or until nicely browned. Once cooked, place on an oven tray and put the tray in the oven to keep the fritters warm.
Continue with the remaining mix.
Serve fritters with salad, or top with a poached egg for breakfast. The options are endless!
Thermomix Method
Preheat the oven to 120°.
Place the baby corn in the Thermomix bowl and chop for 5 sec/sp 4.
Add remaining fritter ingredients, except the butter, and combine for 20 sec/sp 2/reverse.
Melt 1 tbsp of butter in a fry pan over medium heat.
Using a dessert spoon, spoon the fritter mix into the frypan. You should get 12 fritters from the mix.
Cook the fritters for 3 mins on each side or until nicely browned. Once cooked, place on an oven tray and put the tray in the oven to keep the fritters warm.
Continue with the remaining mix.
Serve fritters with salad, or top with a poached egg for breakfast. The options are endless!
Avocado cream - Place the avocado and sour cream in a blender (or Thermomix 30 sec/sp4) and blend until smooth.
