Ingredients

  • 4 tbsp extra virgin olive oil or coconut oil

  • 24 large prawns, peeled and deveined


Bowl 1

  • ¾ cup almond meal


Bowl 2

  • 2 large eggs

  • 2 tbsp water


Bowl 3

  • ⅔ cup almond meal

  • ⅔ cup dessicated coconut

  • 2 tsp Mingle Smokey Seasoning (or 1 tsp onion powder, 1/2 tsp garlic powder and 1/2 tsp smoked paprika)

Description

My family just loves crumbed prawns so when I got a box of prawns for Christmas I decided to try to make a keto and gluten free crumb mix that we could do at home.


This recipe was a huge hit. In fact, while eating his dinner my 6 year old asked if he could have '150 more prawns please'. I'd say that's a winner!


The crumb is a mix of almond meal and dessicated coconut. I really like the crunch the almond meal gives the prawns. You could use coconut flour but I'm not sure if it would give the same crunch and the overall taste would be sweeter.

You could use dessicated or shredded coconut for this. Dessicated was what I had to hand at the time.


In the crumb mix I used Mingle's Smokey Seasoning (keto friendly and free of nasties) however you can use any spices you like.


To get the perfect crunch, I pan fried these in oil. You can also bake them in the oven but they wouldn't have the same amount of crunch.

Instructions

  1. Prepare bowls 1, 2 and 3. Whisk the contents of bowl 2 well and mix together the contents in bowl 3.

  2. One prawn at a time, coat with almond meal from bowl 1, then dip into the egg mix in bowl 2 and shake off any excess. Lastly, coat in the crumb mix in bowl 3.

  3. Once all the prawns are coated in the crumb mix, heat the oil in a large fry pan over medium - high heat.

  4. Place the prawns in once the oil is hot (I put some crumbs in first to see if the oil bubbles, if it does it is hot enough). Cook the prawns for 3 mins on each side or until golden and cooked through.

  5. Remove the prawns from the frypan and place on a plate lined with two sheets of paper towel.

  6. Serve while hot and enjoy with fresh salad mayonnaise.
