Description

When I saw Keto Bites share their dark chocolate cookie crumbs, I immediately had multiple recipe ideas in my head. I love the idea of these crumbs and they make keto baking just that little bit easier.


I tested these with the dark chocolate and vanilla cookie crumbs and they were both delicious.


The flavour options are endless here. You can make them adult only and add a little rum, or for kid friendly leave alcohol free and add freeze dried berries to the mix. Some orange rind in the dark chocolate mix would be amazing or even peppermint extract for choc mint balls.


These can easily be made a few days ahead - if you have the willpower to leave them alone until needed. Try to make them on a cooler day though as like most ball recipes, they are easier to form when it's not stinking hot like its been in Perth this week.

Instructions

  1. Mix cookie crumbs and cream together well and using a teaspoon, scoop out a small amount and form balls.

  2. Place balls on a plate and leave in the fridge for approximately 20 minutes.

  3. Chop the dark chocolate and put it in a microwave proof bowl with the coconut oil.

  4. Melt in the microwave in 30 second bursts, stirring well each time until the chocolate has melted and is well combined with the coconut oil.

  5. Line a baking tray with paper and take the cookie crumb balls out of the fridge.

  6. Place a ball in the melted chocolate and using two forks, gently roll it until it is fully coated with the chocolate. Then place it gently on the baking tray.

  7. Repeat with the remaining balls.

  8. If you have chocolate left, you can do a second coat if you'd like a thicker coat.

  9. Decorate the balls if you wish - sprinkle with coconut and freeze dried berries for a Christmas look.

  10. Place in the fridge until chocolate hardens and then store in an airtight container until needed.
