Description
We all remember Ice Magic as kids I'm sure. I used to love cracking that hard chocolate shell on top of my ice cream! I recently tested a diary free custard recipe and thought I could freeze it for an easy keto friendly ice cream option...then I thought a healthier version of Ice Magic would be an AMAZING addition!
I'm all for quick and easy and this really couldn't be easier. Ok...I might have cheated a bit using store bought chocolate but it's what I had to hand and it turned out so well! I have also included an alternative recipe for those who prefer to make it from scratch though.
Finding a ready made chocolate that is also low carb and keto friendly is hard. They will often be filled with artificial sweeteners which just don't sit well with me. Lindt 95% dark chocolate is easy to find in most supermarkets and it is low carb. It's great for a square after dinner and is also dairy and gluten free. If 95% is too bitter for you, you can either add some powdered sweetener or go for a lower percentage chocolate.
Instructions
Place all ingredients in a heatproof bowl, and place bowl on top of a saucepan 1/4 filled with water. Heat over a medium heat, stirring until the ingredients are melted and combined.
Remove from the heat and allow to cool slightly.
Drizzle over ice cream and watch has it hardens. It should take approximately 30 seconds to solidify.
Enjoy!
