Ingredients

  • 1 tbsp extra virgin olive oil

  • 1 kg chicken thigh cutlets

  • 2 rashers bacon, diced

  • 200g mushrooms, sliced

  • 1/2 onion, diced

  • 2 cloves garlic, minced

  • 2 tsp Dijon mustard

  • 1 tsp thyme leaves

  • 1 cup chicken broth/stock

  • 1/2 cup cream

  • 1/4 tsp xanthan gum

Description

I just love a hot casserole in these colder months. They are the perfect comfort food and warm me from the inside out.


This Chicken, Bacon & Mushroom Casserole is one of my favourites. You can make this with any cut of chicken you like, but I prefer thigh cutlets or marylands. For a more budget-friendly option, chicken drumsticks would be perfect.


I enjoy mine fresh out of the oven, with smooth cauliflower mash and crisp roasted Brussels sprouts.


You could definitely make this dairy-free by using coconut cream instead of cream. 

Instructions

  1. Preheat the oven to 200°.

  2. In an oven and stove proof casserole dish, heat the olive oil over medium-high heat (if you don’t have an appropriate casserole dish start in a fry pan and then transfer to a large casserole dish).

  3. Add the garlic and onion to the casserole dish and sauté for 3 mins.

  4. Add the bacon & mushrooms to the casserole dish and cook for 5 mins.

  5. Add the thigh cutlets and sear skin side down for 4 mins, then turn over.

  6. Add the Dijon mustard and thyme leaves, and stir to combine.

  7. Pour in the chicken stock and ensure the chicken is sitting high enough so the skin is out of the liquid. Transfer the casserole dish to the oven.

  8. With 15 mins to go add the cream and sprinkle over the xanthan gum, stirring well to combine. Return to the oven.

  9. When the chicken is cooked, remove the casserole dish from the oven and serve while hot. Place a cutlet on each plate and then spoon the sauce over the top, making sure you get lots of mushrooms and bacon.
