One serving of cauliflower (raw or cooked) has just 25 calories, 5 grams of carbohydrates, and 2 grams of protein!


The main reason that my Bacon and Egg Cauliflower salad recipe is so tasty is the dressing that I use. It's amazing what you can do with some keto mayonnaise, lemon juice, and simple salt and pepper. Whip it all together and you've got a creamy dressing with just the right amount of tang and sweetness.


In the recipe, you'll also notice that I use finely diced dill cucumbers and spring onions. These add a juicy crunch to the salad, and the flavour of both these veggies melds nicely with the bacon, eggs, and cauliflower.

Since I've made this recipe hundreds of times, I've got a few tricks up my sleeve for achieving the tastiest Bacon and Egg Cauli Salad.


  • Use small cauliflower florets. These will absorb the dressing better and provide a better texture for the salad.

  • Always use fresh ingredients. This applies for all salads, really. The fresher your ingredients, the tastier it will be.

  • Rinse the cauliflower in cold water after boiling them for three minutes.  This will help stop the cooking process, resulting in that slight crunchy texture that makes the salad so good.

  • Feel free to experiment with your own variations of the recipe. Spice it up by adding some chili flakes or go for a tangier vinaigrette. You can never go wrong with a classic bacon and egg salad.

Instructions

  1. Bring a medium saucepan of water to the boil and put the cauliflower in, boil for 3 mins. 

  2. Once 3 mins is up, drain the cauliflower and rinse  under cold water to stop the cooking process. 

  3. Combine all the salad ingredients in a medium sized bowl and season to taste. 

  4. Enjoy straight away or cover and place in the fridge until needed.
