This Bacon and Egg Cauli Salad is an awesome alternative to the traditional potato or pasta salads. The savoury bits of bacon, the zing of spring onions, and the added flavour from the creamy dressing - this recipe will be a hit amongst your family and friends. It's also low in carbs and high in protein, so it won't leave you feeling guilty about over-indulging!
Easy Salads for BBQ
Let's face it, nobody likes a salad that takes forever to make. You want something quick and easy that everyone can enjoy, with fresh ingredients that you can find in your local grocery store (or perhaps even straight from the garden!).
Here are a couple of different salads that are perfect for BBQs, and can be made in a jiffy:
Moroccan Roasted Cauliflower Salad: If you want a salad that's exotic and flavourful, then here’s another one of my recipes that would be perfect for you. The pomegranate seeds and pine nuts give the salad a delicious crunch, and the bold spices like cumin and paprika make sure that it packs a punch!
Caesar Salad: Who doesn't love a classic Caesar salad? This timeless favourite has been on menus for years and is known for its creamy dressing, crunchy croutons, and savoury Parmesan. Toss in some grilled chicken and you've got yourself a full meal in itself! Here’s my recipe for a low calorie Caesar salad dressing the next time you’re craving for one - https://www.yourmeals.com.au/recipes/caesar-salad-dressing.
Greek Salad: Perfect for a light lunch or side dish. The combination of feta cheese, juicy tomatoes, and fresh cucumbers is sure to be a hit with your guests. The salty flavour from the feta helps balance out the sweetness from the tomatoes, and all these ingredients are dressed with a simple olive oil and lemon juice vinaigrette.
Lastly, let's not forget the star of the show - my Bacon and Egg Cauliflower Salad recipe! This is perhaps the easiest salad recipe to make on the list. It has all the scrumptiousness of a traditional bacon and egg salad, but with the added health benefits of tasty cauliflower. Win-win!
Best Cauliflower Salad Recipe
While potato salads are usually considered the gold standard for barbeques, they're not particularly healthy. This is where cauliflower comes in - it's among the perfect potato salad alternatives! One serving of cauliflower (raw or cooked) has just 25 calories, 5 grams of carbohydrates, and 2 grams of protein!
The main reason that my Bacon and Egg Cauliflower salad recipe is so tasty is the dressing that I use. It's amazing what you can do with some keto mayonnaise, lemon juice, and simple salt and pepper. Whip it all together and you've got a creamy dressing with just the right amount of tang and sweetness.
In the recipe, you'll also notice that I use finely diced dill cucumbers and spring onions. These add a juicy crunch to the salad, and the flavour of both these veggies melds nicely with the bacon, eggs, and cauliflower.
Fun Fact: Did you know that cauliflower comes from the Brassicaceae family of vegetables, which also includes cabbage, brussels sprouts, kale, broccoli, and collard greens? They all evolved from different parts of the same wild plant!
Low-Carb Egg Salad with Bacon Ideas
Who says you can't have delicious food while keeping it low carb? My Bacon and Egg Cauli Salad is one of the many examples for low-carb, healthy salad recipes.
If you're a big fan of a filling bowl of bacon and egg salad, here are some other ideas that you can try:
Bacon, Egg, and Avocado Salad: This salad is packed with healthy fats from the avocado and a nice crunch from the bacon. The hard-boiled eggs add protein to make it a complete meal.
Egg Salad with Bacon and Spinach: If you're looking for something a bit greener, this salad is the perfect option. Spinach is a superfood, and it goes excellently with the bacon and egg.
Salade Lyonnaise: This French classic is made with frisée lettuce, bacon lardons, and poached eggs. You can keep it low-carb by using a simple mustard-vinegar dressing or a light vinaigrette.
The next time you're looking for a healthy salad recipe, give one of these a shot. Or better yet, give my Bacon and Egg Cauli Salad a try if you're looking for a low-carb cauliflower salad recipe with bacon!
Tips & Tricks
Since I've made this recipe hundreds of times, I've got a few tricks up my sleeve for achieving the tastiest Bacon and Egg Cauli Salad.
Use small cauliflower florets. These will absorb the dressing better and provide a better texture for the salad.
Always use fresh ingredients. This applies for all salads, really. The fresher your ingredients, the tastier it will be.
Rinse the cauliflower in cold water after boiling them for three minutes. This will help stop the cooking process, resulting in that slight crunchy texture that makes the salad so good.
Feel free to experiment with your own variations of the recipe. Spice it up by adding some chili flakes or go for a tangier vinaigrette. You can never go wrong with a classic bacon and egg salad.
With these tips, you'll be able to make the perfect Bacon and Egg Cauli Salad every single time! So why not give it a try? Your BBQs are never going to be the same again, I can tell you that!
Bring a medium saucepan of water to the boil and put the cauliflower in, boil for 3 mins.
Once 3 mins is up, drain the cauliflower and rinse under cold water to stop the cooking process.
Combine all the salad ingredients in a medium sized bowl and season to taste.
Enjoy straight away or cover and place in the fridge until needed.
